Ingredients

  • 120 grams Almond flour
  • 40 grams All-purpose flour
  • 90 grams Butter
  • 100 grams Granulated erythritol
  • 3 large Egg whites
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 1 tablespoon Powdered erythritol

Directions

Step 1

Preheat the oven to 200°C (390°F) and grease a financier or mini muffin tin with butter or non-stick spray.

Step 2

In a medium saucepan, melt the butter over medium heat until it turns golden brown and emits a nutty aroma. Be careful not to burn it. Remove from heat and set aside to cool.

Step 3

In a mixing bowl, sift together the almond flour, all-purpose flour, and baking powder. Add granulated erythritol and salt to the dry mixture.

Step 4

In a separate large mixing bowl, beat the egg whites until they're slightly frothy. You can use a hand whisk or an electric mixer.

Step 5

Add the dry ingredients to the egg whites and gently fold until fully combined. Be careful not to overmix.

Step 6

Stir in the cooled browned butter and vanilla extract until the mixture is smooth and well incorporated.

Step 7

Pour the batter into the prepared tin, filling each cavity about two-thirds full.

Step 8

Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

Step 9

Remove from the oven and set the tins on a wire rack to cool for a few minutes before removing the financiers from the tins.

Step 10

Sprinkle the tops with powdered erythritol for an added touch of sweetness, if desired.

Step 11

Serve warm or at room temperature, and enjoy your sugar-free French delight!
