Ingredients

  • 2 cups Whole wheat flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 4 tablespoons Unsalted butter, melted
  • 2 large Eggs
  • 1 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Stevia extract or sweetener of choice

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a doughnut pan with non-stick cooking spray and set aside.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, eggs, Greek yogurt, vanilla extract, and stevia extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined. Be careful not to overmix, which can make the doughnuts tough.

Step 5

Spoon the batter into a large ziplock bag and snip off one corner to create a piping bag. Pipe the batter into the prepared doughnut pan, filling each mold about two-thirds full.

Step 6

Tap the pan gently on the counter to remove any air bubbles and smooth the tops of the doughnuts with a spatula if necessary.

Step 7

Bake in the preheated oven for 10 minutes or until a toothpick inserted into the center of a doughnut comes out clean.

Step 8

Let the doughnuts cool in the pan for 5 minutes before removing and transferring them to a wire rack to cool completely.

Step 9

Serve the doughnuts plain or dust lightly with additional ground cinnamon if desired. Enjoy!
