Ingredients

  • 500 ml Whole milk
  • 4 large Egg yolks
  • 60 g Sugar substitute (such as erythritol or stevia)
  • 1 tsp Vanilla extract
  • 2 tbsp Cornstarch
  • 0.5 tsp Salt

Directions

Step 1

In a medium saucepan, heat the milk over low heat until it is just about to simmer. Do not let it boil.

While the milk is heating, whisk together the egg yolks, sugar substitute, cornstarch, and salt in a medium bowl until well combined and smooth.

Once the milk is hot, slowly pour about a third of it into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Gradually whisk the tempered egg mixture back into the remaining milk in the saucepan.

Continue cooking the mixture over low heat, stirring constantly with a wooden spoon or heatproof spatula, until the custard thickens and coats the back of the spoon. This should take approximately 8-10 minutes.

Remove the saucepan from the heat and stir in the vanilla extract.
