  • 240 ml Heavy whipping cream
  • 3 large Eggs (separated)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Stevia or Erythritol
  • 0.25 teaspoon Salt

Directions

Step 1

Begin by melting the dark chocolate. Break the chocolate into pieces and place in a heatproof bowl over a pot of simmering water (double boiler method). Stir occasionally until fully melted and smooth. Remove from heat and set aside to cool slightly.

Step 2

In a separate bowl, whisk together the cocoa powder, stevia or erythritol, and salt until evenly mixed.

In a large bowl, add the egg yolks, vanilla extract, and half of the stevia-cocoa mixture. Whisk together until the mixture becomes thick and pale.
