  • 1 teaspoon salt

Directions

Step 1

Line an 8x8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal, and set aside.

In a medium saucepan over medium heat, combine the heavy cream, unsalted butter, sugar-free sweetener, and sugar-free corn syrup substitute.

Stir constantly with a rubber spatula or wooden spoon until the butter melts and the mixture begins to simmer.

Attach a candy thermometer to the side of the saucepan, ensuring it does not touch the bottom of the pan. Continue to cook, without stirring, until the mixture reaches 248°F (120°C), also known as firm ball stage.

Once set, use the parchment overhang to lift the caramel block from the pan. Use a sharp knife or kitchen scissors to cut into small squares or desired shapes.
