Ingredients

  • 1 cup Whole wheat flour
  • 4 large Eggs
  • 1 cup Milk
  • 0.5 cup Water
  • 0.25 teaspoon Salt
  • 2 tablespoons, melted Butter
  • 1.5 cups Cottage cheese
  • 4 ounces, softened Cream cheese
  • 1 teaspoon Vanilla extract
  • 1 large Egg yolk

Directions

Step 1

Begin by preparing the crepe batter. In a mixing bowl, whisk together the whole wheat flour, eggs, milk, water, and salt until smooth. Stir in the melted butter and mix until well combined.

Step 2

Cover the batter and let it rest for at least 15 minutes in the refrigerator. This resting time helps the flour particles to absorb the liquid, resulting in a softer crepe.

Step 3

Meanwhile, prepare the cheese filling. In a medium bowl, combine cottage cheese, cream cheese, vanilla extract, and egg yolk. Mix until smooth and set aside.

Step 4

Heat a non-stick skillet over medium heat. Lightly spray or grease with cooking oil. Pour about 1/4 cup of batter into the center of the skillet and tilt the pan in a circular motion to spread the batter evenly.

Step 5

Cook the crepe for about 1-2 minutes, until the edges are dry and the bottom is lightly golden. Flip and cook the other side for another 30 seconds. Transfer to a plate. Repeat with the remaining batter.

Step 6

Place about 2 tablespoons of cheese filling onto each crepe. Fold the sides over the filling and then roll from one end to the other to enclose it completely.

Step 7

Heat a bit more butter in the skillet over medium heat. Place the filled blintzes seam-side down and cook for about 2-3 minutes per side, or until golden brown and heated through.

Step 8

Serve warm, garnished with fresh fruit, a dollop of sour cream, or sugar-free syrup if desired.
