Ingredients

  • 1.5 cups Almond flour
  • 0.5 cup Unsalted butter
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 0.5 cup Granulated erythritol
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Monk fruit sweetener, golden
  • 2 tablespoons Heavy cream
  • 0.5 cup Chopped pecans

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.

Step 2

To make the tart shells, in a medium bowl combine the almond flour, 0.25 cup of granulated erythritol, and salt.

Step 3

Melt 0.25 cup of the unsalted butter and add it to the almond flour mixture along with the egg and 0.5 teaspoon of vanilla extract. Mix until a dough forms.

Step 4

Divide the dough into 12 equal portions and press each portion into the base and sides of each muffin cup to form a tart shell.

Step 5

For the filling, in a small saucepan over medium heat, melt the remaining 0.25 cup of unsalted butter.

Add the golden monk fruit sweetener and heavy cream to the melted butter and stir until well combined.
