Ingredients

  • 4 pieces Large eggs
  • 100 grams Powdered erythritol
  • 100 grams All-purpose flour
  • 20 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 50 milliliters Milk
  • 50 grams Butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or line it with parchment paper.

Step 2

Separate the egg yolks from the egg whites. Place the egg whites into a large mixing bowl.

Step 3

Using an electric mixer, beat the egg whites on medium speed until soft peaks form.

Step 4

Gradually add the erythritol to the egg whites, continuing to beat until they reach stiff peaks.

Step 5

In another bowl, whisk the egg yolks and vanilla extract until they are pale and frothy.

Step 6

Gradually fold the egg yolk mixture into the whipped egg whites with a spatula, being careful not to deflate the mixture.

Step 7

Sift the flour, cornstarch, and baking powder over the egg mixture, then gently fold them in until fully incorporated.

Step 8

Mix the melted butter and milk together, then add to the batter, folding gently until just combined.

Step 9

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 10

Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 11

Once cooked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, turn it out onto a wire rack to cool completely.

Step 12

Once cooled, slice and serve the sugar-free bolu, enjoying its light and fluffy texture.
