Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 piece celery stalk
  • 0.5 piece small red onion
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 pieces lettuce leaves

Directions

Step 1

Place the eggs in a saucepan and cover with cold water by at least an inch.

Step 2

Bring to a boil over medium-high heat. Once the water boils, remove the saucepan from heat and cover with a lid. Let the eggs sit for 8-10 minutes.

Step 3

While the eggs are sitting, finely chop the celery, red onion, and parsley. Set aside.

Step 4

After 10 minutes, transfer the eggs to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes.

Step 5

Peel the eggs and chop them into small pieces.

Step 6

In a large bowl, combine the chopped eggs, mayonnaise, Dijon mustard, chopped celery, red onion, and parsley.

Step 7

Season with salt and black pepper, then mix everything gently until evenly combined.

Step 8

Taste and adjust the seasoning if needed.

Step 9

Serve scooped onto lettuce leaves or use as a filling for sandwiches.
