Warm the milk to around 37°C (98°F). It should be warm to the touch but not hot.
In a large bowl, mix the flour and instant dry yeast. Make a well in the center and pour in the warm milk.
Add the eggs, melted butter, salt, cinnamon, vanilla extract, and erythritol into the well. Mix everything together until a dough begins to form.
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
After the dough has risen, punch it down to remove excess air. Roll it out on a floured surface to about 1 cm thick.
Use a 7 cm (about 2.75 inches) round cutter to cut out circles. Re-roll any scraps and cut out additional circles.
Place the dough circles on a baking sheet lined with parchment paper, cover, and allow to rise again for another 30 minutes.
In a deep saucepan or fryer, heat the oil to 175°C (347°F). Carefully place the risen doughnuts into the oil, frying them in batches.
Fry each Berliner for about 2-3 minutes per side, or until golden brown. Remove with a slotted spoon and drain on paper towels.
Allow the Berliners to cool slightly. Fill a piping bag fitted with a round nozzle with the sugar-free jam.
Pierce a hole in the side of each Berliner and fill with approximately 1 tablespoon of jam.
Serve the Berliners warm for the best taste experience.
