  • 12 pounds whole turkey
  • 0.5 cups olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh sage
  • 1 large onion, quartered
  • 2 lemons
  • 6 garlic cloves, smashed
  • 2 cups chicken broth

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Prepare the turkey by removing giblets and patting it dry with paper towels.

Step 3

In a small bowl, combine olive oil, salt, pepper, chopped rosemary, thyme, and sage.

Step 4

Rub the mixture all over the turkey, ensuring even coverage including under the skin and inside the cavity.

Stuff the cavity with the quartered onion, halved lemons, and smashed garlic cloves.
