Ingredients

  • 150 grams Unsalted Butter
  • 100 grams Erythritol
  • 3 large Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 200 grams Cornstarch
  • 125 grams All-purpose Flour
  • 1 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 350 grams Sugar-free Dulce de Leche
  • 50 grams Unsweetened Desiccated Coconut

Directions

Step 1

In a large bowl, cream the unsalted butter and erythritol together until light and fluffy.

Step 2

Add in the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

Step 3

In a separate bowl, sift together the cornstarch, all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, stirring until just combined. The dough should be soft and not sticky.

Wrap the dough in plastic wrap and chill it in the refrigerator for about 30 minutes.
