Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Unsweetened almond milk
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Melted coconut oil
  • 0.5 cup Powdered erythritol
  • 1 tablespoon Ground cinnamon (for coating)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a donut pan with a bit of coconut oil to prevent sticking.

Step 2

In a large bowl, mix together the almond flour, baking powder, salt, and teaspoon of ground cinnamon.

Step 3

In another bowl, whisk together the unsweetened almond milk, large eggs, vanilla extract, and melted coconut oil until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.

Step 5

Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

Step 6

Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Step 7

While the donuts are baking, mix the powdered erythritol and tablespoon of ground cinnamon in a shallow dish for the coating.

Step 8

Once the donuts are done, remove them from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack.

Step 9

While the donuts are still warm, gently press them into the cinnamon erythritol mixture to coat each side evenly.

Step 10

Allow the donuts to cool completely before serving for the best texture.
