Ingredients

  • 125 ml Water
  • 60 g Unsalted butter
  • 1 pinch Salt
  • 20 g Granulated erythritol
  • 75 g All-purpose flour
  • 2 Large eggs
  • 50 g Sugar-free pearl sugar or crushed nuts

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a saucepan over medium heat, combine water, butter, salt, and granulated erythritol. Heat until the butter is melted and the mixture comes to a boil.

Step 3

Remove the saucepan from the heat and add the flour all at once. Stir quickly with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Return the pan to the heat and cook the dough for another 1–2 minutes, stirring constantly. This helps to dry the dough out slightly.

Transfer the dough to a bowl and let it cool for a few minutes.

Add the eggs one at a time, beating well with the spoon or an electric mixer until each egg is fully incorporated before adding the next one. The dough should be smooth and shiny.

Spoon the dough into a pastry bag fitted with a large round tip and pipe small mounds (about 3 cm wide) onto the prepared baking sheet, leaving space between each mound.
