Preheat the oven to 400°F (200°C).
Wash the eggplants and poke them with a fork in several places. This aids in even cooking and prevents them from bursting.
Place the eggplants on a baking sheet lined with foil. Roast them in the oven for about 20 minutes or until the skin is wrinkled and the flesh is tender. Alternately, you can directly roast them over an open flame, rotating occasionally until charred all over and cooked through.
