Ingredients

  • 250 grams Mascarpone cheese
  • 200 ml Heavy cream
  • 4 tablespoons Stevia or other sugar substitute
  • 3 tablespoons Cocoa powder
  • 50 grams Dark chocolate, sugar-free
  • 250 ml Espresso or strong coffee, brewed
  • 1 teaspoon Vanilla extract
  • 100 grams Almond flour
  • 1 teaspoon Baking powder
  • 2 Eggs
  • 100 ml Almond milk, unsweetened
  • 50 grams Butter, melted

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a bowl, mix almond flour, baking powder, and a pinch of salt. Set aside.

Step 3

In another bowl, whisk eggs, 2 tablespoons of stevia, almond milk, and melted butter until well blended.

Step 4

Gradually incorporate the dry ingredients into the wet mixture to form a smooth batter.

Step 5

Pour the batter into the prepared baking tray and spread evenly.

Step 6

Bake for 20-25 minutes or until the cake is golden and a toothpick comes out clean. Let cool completely.

Step 7

While the cake is baking, prepare the coffee mixture by mixing brewed espresso and vanilla extract. Set aside to cool.

Step 8

For the mascarpone cream, whip the heavy cream with 2 tablespoons of stevia until soft peaks form.

Step 9

Fold in the mascarpone cheese to the whipped cream gently to maintain volume.

Step 10

Once the cake is cooled, cut it into finger-sized pieces resembling ladyfingers.

Step 11

Dip each piece of cake briefly into the coffee mixture, ensuring it's not soaked.

Step 12

Arrange a layer of coffee-dipped cake pieces on the bottom of a serving dish.

Step 13

Spread half of the mascarpone cream over the cake layer.

Step 14

Repeat with a second layer of coffee-dipped cake and the remaining mascarpone cream.

Step 15

Dust the top with cocoa powder and grated sugar-free dark chocolate.

Step 16

Cover and refrigerate for at least 4 hours, or overnight for best results.

Step 17

Before serving, dust with a little more cocoa powder if desired.
