Ingredients

  • 200 grams glutinous rice flour (mochiko)
  • 30 grams unsweetened cocoa powder
  • 80 grams erythritol or any preferred sugar substitute
  • 250 milliliters water
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 50 grams cornstarch or tapioca starch for dusting
  • 50 grams unsweetened shredded coconut or cocoa powder for coating (optional)

Directions

Step 1

In a large mixing bowl, combine the glutinous rice flour, unsweetened cocoa powder, erythritol, and salt. Mix well to ensure even distribution.

Step 2

Gradually add the water to the dry ingredients while stirring continuously to form a smooth batter. Make sure there are no lumps.

Step 3

Stir in the vanilla extract to the batter.

Step 4

Transfer the batter to a microwave-safe dish, spreading it evenly.

Step 5

Microwave the mixture on high power for 1 minute. Remove and stir thoroughly, ensuring the mixture cooks evenly.

Step 6

Return the mixture to the microwave and cook on high for another 1.5 minutes. The mochi should appear semi-translucent and elastic.

Step 7

Let the mochi cool for a few minutes until it's comfortable to handle but still warm.

Step 8

Dust a clean working surface with cornstarch or tapioca starch to prevent sticking.

Step 9

Transfer the mochi dough to the dusted surface. Flatten it using your hands or a rolling pin to about 1 cm thickness.

Step 10

Cut the flattened mochi into small squares or rounds using a knife or cookie cutter, as desired.

Step 11

Optionally, roll each piece of mochi in unsweetened shredded coconut or additional cocoa powder for extra flavor.

Step 12

Serve immediately or store in an airtight container at room temperature for up to 2 days.
