Ingredients

  • 1.5 cups Unsweetened shredded coconut
  • 0.25 cup Cocoa powder
  • 0.5 cup Almond flour
  • 0.25 cup Coconut oil
  • 1 cup Pitted dates
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 2 tablespoons Unsweetened almond milk

Directions

Step 1

Start by soaking the pitted dates in warm water for about 10 minutes to soften them. Drain the water thoroughly.

Step 2

In a food processor, add the soaked dates and blend until they form a thick paste.

Step 3

Add the unsweetened shredded coconut, cocoa powder, almond flour, coconut oil, vanilla extract, and sea salt to the food processor with the dates.

Step 4

Pulse the mixture until all ingredients are well combined and form a sticky dough-like consistency.

Step 5

If the mixture seems too dry to form into balls, add the unsweetened almond milk, one tablespoon at a time, and pulse again until you reach the desired consistency.

Step 6

Using your hands, scoop out small portions of the mixture and roll them into 1-inch balls.

Step 7

Place the rolled balls onto a baking sheet lined with parchment paper.

Step 8

Chill the chocolate coconut balls in the refrigerator for at least 30 minutes to firm up before serving.

Step 9

Store any leftover balls in an airtight container in the refrigerator for up to one week.
