  • 1 Egg (for egg wash)
  • 15 milliliters Milk (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, instant yeast, and salt.

Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse breadcrumbs.

Gradually add the cold water to the mixture, stirring with a wooden spoon until a rough dough begins to form. Do not overmix.

Flour a clean surface and roll the dough into a 12x8 inch rectangle.
