Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 2 tablespoons Unsweetened cocoa powder
  • 0.25 cup Coconut oil
  • 2 tablespoons Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 15 pieces Pitted dates
  • 0.5 cup Peanut butter
  • 0.5 cup Coconut milk
  • 200 grams Dark chocolate (sugar-free)
  • 0.25 teaspoon Sea salt

Directions

Step 1

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, cocoa powder, melted coconut oil, erythritol, and vanilla extract. Mix until the ingredients form a uniform crumbly dough.

Step 3

Press the dough evenly into the prepared baking pan, ensuring a uniform thickness. Bake in the preheated oven for 10-12 minutes until slightly firm to the touch. Remove and let cool.

Step 4

To prepare the caramel layer, place the pitted dates in a bowl and cover with hot water. Let sit for 10 minutes to soften, then drain.

Step 5

In a blender or food processor, combine the softened dates, peanut butter, coconut milk, and sea salt. Blend until smooth and creamy.

Step 6

Spread the date caramel mixture evenly over the cooled base layer in the baking pan.

Step 7

For the chocolate topping, gently melt the dark chocolate in a microwave-safe bowl or using a double boiler until smooth.

Step 8

Pour the melted chocolate over the caramel layer, spreading evenly with a spatula for a smooth finish.

Step 9

Refrigerate the slice for at least 1 hour to set the layers and allow the flavors to meld.

Step 10

Once set, remove from the fridge, slice into 16 pieces, and serve. Store leftovers in an airtight container in the refrigerator.
