Ingredients

  • 3 tablespoons Unflavored gelatin powder
  • 1 cup Cold water
  • 1.5 cups Sugar-free sweetener (such as erythritol or monk fruit sweetener)
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt
  • 8 ounces Sugar-free dark chocolate chips
  • 2 tablespoons Coconut oil

Directions

Step 1

Line a 9x9 inch baking dish with parchment paper and lightly grease it with cooking spray.

Step 2

In the bowl of a stand mixer, combine the unflavored gelatin with half a cup of cold water. Let it sit to bloom while you prepare the syrup.

Step 3

In a small saucepan, add the remaining half cup of cold water and sugar-free sweetener. Stir to combine.

Step 4

Heat the mixture over medium heat, stirring until the sweetener dissolves. Once dissolved, stop stirring and let it come to a boil. Use a candy thermometer to ensure the mixture reaches 240°F (115°C).

Step 5

Once the desired temperature is reached, remove the syrup from heat and carefully pour it down the side of the mixing bowl containing the gelatin.

Step 6

Attach the whisk attachment to the mixer and start on low speed. Gradually increase the speed to high, whisking until the mixture becomes thick, glossy, and forms stiff peaks—this could take about 10-15 minutes.

Step 7

Add the vanilla extract and salt, and whisk until well incorporated.

Step 8

Pour the marshmallow mixture into the prepared baking dish, smoothing the top with a spatula. Let it set at room temperature for at least 4 hours, or until firm.

Step 9

Once set, turn the marshmallow slab onto a cutting board. Remove parchment paper and cut into 1-inch squares using a sharp knife dusted with a bit of sweetener.

Step 10

For the chocolate coating, melt the sugar-free dark chocolate chips and coconut oil in a double boiler over low heat, stirring until smooth.

Step 11

Dip each marshmallow square into the melted chocolate, ensuring it's fully coated. Use a fork to lift and allow excess chocolate to drip before placing on a parchment-lined tray.

Step 12

Let the chocolate-covered marshmallows set at room temperature or refrigerate them to speed up the process.

Step 13

Store in an airtight container at a cool temperature and enjoy your sugar-free treats!
