Ingredients

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 small Red onion
  • 1 large Avocado
  • 1 cup Canned black beans
  • 1 cup Corn kernels
  • 2 tablespoons Lime juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Chipotle powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce, then chop it into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel and seed the cucumber, then slice it into half-moons and add to the salad bowl.

Step 4

Finely chop the red onion and add it to the bowl.

Step 5

Halve the avocado, remove the pit, scoop out the flesh, and cut it into cubes. Add the avocado to the salad bowl.

Step 6

Rinse the canned black beans under cold water and drain well before adding to the salad.
