Directions

Step 1

Place the eggs, lime juice, Dijon mustard, and salt in a food processor or blender. Blend on high speed for about 30 seconds until everything is well combined and slightly frothy.

With the machine running on low, very slowly drizzle in the avocado oil, a few drops at a time to start, gradually increasing to a thin, steady stream. This emulsification process should take about 2-3 minutes in total.
