Ingredients

  • 1 cup Greek yogurt, plain
  • 2 whole peppers Chipotle peppers in adobo sauce
  • 3 tablespoons Lime juice, fresh
  • 2 tablespoons Olive oil
  • 1 tablespoon Apple cider vinegar
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, ground

Directions

Step 1

Add the Greek yogurt to a mixing bowl or the bowl of a food processor.

Step 2

Cut open the chipotle peppers and remove the seeds to adjust heat level, if desired. Add the chipotle peppers along with some of the adobo sauce (approximately 1 tablespoon) to the bowl with the yogurt.

Step 3

Add fresh lime juice, olive oil, apple cider vinegar, minced garlic, salt, and ground black pepper to the mixture.

Step 4

Blend all ingredients together using an immersion blender or food processor until smooth and well combined. Adjust seasoning to taste.

Step 5

Transfer the dressing to a jar or container. Refrigerate for at least 30 minutes before using to allow flavors to meld.

Step 6
