Ingredients

  • 500 grams Chicken breast, boneless and skinless
  • 60 milliliters Olive oil
  • 60 milliliters Lemon juice, freshly squeezed
  • 4 cloves Garlic cloves, minced
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Red onion, cut into chunks
  • 1 large Red bell pepper, cut into chunks
  • 8 pieces Wooden skewers, soaked in water for 30 minutes

Directions

Step 1

Cut the chicken breast into 1-inch cubes and set aside in a large bowl.

Step 2

In a small mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and black pepper to make the marinade.

Step 3

Pour the marinade over the chicken cubes and mix well to ensure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours, to allow the flavors to develop.

Step 4

Preheat your grill or grill pan over medium-high heat.

Step 5

Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with chunks of red onion and red bell pepper.

Step 6

Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and has grill marks.

Step 7

Remove from the grill and let the skewers rest for a few minutes before serving.

Step 8

Serve the chicken souvlaki with your choice of sides such as a fresh Greek salad or tzatziki sauce for a complete meal.
