Ingredients

  • 1.5 cups whole-wheat flour
  • 0.5 cup unsalted butter, chilled and cubed
  • 2 ounces cream cheese, softened
  • 0.5 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 2 tablespoons iced water
  • 2 cups fresh cherries, pitted and halved
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons powdered erythritol
  • 1 large egg, beaten

Directions

Step 1

In a large mixing bowl, combine the flour and salt. Add the chilled butter and blend with a pastry cutter until the mixture resembles coarse crumbs.

Step 2

In a separate small bowl, mix the cream cheese, Greek yogurt, vanilla extract, and iced water until smooth. Add this mixture to the flour and butter, stirring until the dough begins to come together.

Step 3

Shape the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes while preparing the filling.

Step 4

For the filling, mix the cherries, lemon juice, cornstarch, and powdered erythritol in a saucepan over medium heat. Cook until slightly thickened, about 5-7 minutes, stirring occasionally. Remove from heat and let cool.

Step 5

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 6

On a lightly floured surface, roll the chilled dough into a 12 x 8-inch rectangle. Cut the dough into 8 equal rectangles.

Step 7

Place a spoonful of the cherry filling onto the center of each rectangle. Fold the corners towards the center over the filling, securing them gently.

Step 8

Transfer the Danishes to the prepared baking sheet. Brush the tops with beaten egg.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed.

Step 10

Allow the Danishes to cool on a wire rack before serving.
