Ingredients

  • 2 cups Rice flour
  • 0.5 cup Gram flour (Besan)
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Sesame seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Chili powder
  • 0.25 teaspoon Asafoetida (hing)
  • 1.5 teaspoons Salt
  • 1.5 cups Water
  • 3 cups Oil (for deep frying)

Directions

Step 1

In a large mixing bowl, combine rice flour, gram flour, sesame seeds, cumin seeds, chili powder, asafoetida, and salt.

Step 2

Melt the butter and add it to the flour mixture. Mix well until the ingredients resemble coarse crumbs.

Step 3

Gradually add water to the mixture, little by little, kneading well to form a soft and smooth dough. The dough should be pliable but not sticky.

Step 4

Fit a chakri press with a star-shaped mold and fill it with the prepared dough.

Step 5

Heat oil in a deep frying pan over medium heat until appropriately hot. Test the oil by dropping a small piece of dough; it should rise to the surface quickly without burning.

Step 6

Directly press the chakri into the hot oil in a circular motion to form spirals of about 3 to 4 inches in diameter.

Step 7

Fry the chakri on medium heat until they turn golden brown, flipping once midway to ensure even cooking on both sides.

Step 8

Remove the chakri from the oil using a slotted spoon and drain on paper towels to absorb excess oil.

Step 9

Repeat the process with the remaining dough.

Step 10

Allow the chakri to cool completely before storing them in an airtight container.
