Ingredients

  • 2 tablespoons olive oil
  • 4 large red onions
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup water
  • 1 medium grated apple
  • 2 sprigs fresh thyme

Directions

Step 1

Peel and thinly slice the red onions.

Step 2

In a large pan, heat the olive oil over medium heat.

Step 3

Add the sliced onions and cook, stirring frequently, for about 20-25 minutes until they become very soft and start to brown. Lower the heat if necessary to avoid burning.

Once the onions are well caramelised, add the balsamic vinegar, apple cider vinegar, and soy sauce to the pan.

Stir in the ground cinnamon, ground ginger, salt, and black pepper.
