Ingredients

  • 1 cup Granulated erythritol
  • 1/4 cup Unsalted butter
  • 1/2 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

In a medium-sized heavy-bottom saucepan, add the granulated erythritol and water.

Step 2

Place the saucepan over medium heat and stir constantly until the erythritol has dissolved completely.

Step 3

Once the erythritol is dissolved, stop stirring and allow it to come to a boil. Let it boil undisturbed until it turns a light amber color, about 5-7 minutes.

Step 4

Reduce the heat to low and add the butter. Stir gently until the butter is completely melted.

Step 5

Slowly add the heavy cream while continuing to stir carefully. Be cautious as the mixture may bubble up vigorously.

Step 6

Continue to cook the sauce over low heat, stirring frequently, until it thickens slightly, about 3-5 minutes.

Step 7

Remove the saucepan from the heat and stir in the vanilla extract and salt.

Step 8

Let the caramel sauce cool slightly before using. The sauce will thicken further as it cools.

Step 9

Store any leftovers in an airtight container in the refrigerator for up to two weeks. Reheat gently on the stovetop or in the microwave before serving.
