Ingredients

  • 2 cups Raw peanuts
  • 0.5 cup Erythritol
  • 1 teaspoon Stevia extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.25 cup Water

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

Step 2

In a non-stick skillet over medium heat, combine erythritol, stevia extract, cinnamon, salt, vanilla extract, and water. Stir until erythritol is dissolved and the mixture begins to simmer.

Step 3

Add the raw peanuts to the skillet and stir to coat them evenly with the sweetener mixture.

Step 4

Continue cooking the peanuts over medium heat, stirring frequently, for about 5 to 7 minutes until the liquid is mostly evaporated and the peanuts are glazed.

Step 5

Spread the peanuts in a single layer on the prepared baking sheet.

Step 6

Bake in the preheated oven for 10 to 12 minutes, stirring halfway through, until the peanuts are nicely toasted and the coating is slightly hardened.

Step 7

Remove from the oven and allow the peanuts to cool on the baking sheet. The coating will continue to harden as they cool.

Step 8

Once fully cooled, store in an airtight container. Enjoy your sugar-free candied peanuts as a delightful snack or gift!
