Ingredients

  • 500 grams Paneer
  • 50 grams Butter
  • 400 grams Tomatoes
  • 1 medium Onion
  • 1 inch piece Ginger
  • 3 Garlic cloves
  • 20 grams Cashew nuts
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 100 ml Cream
  • 1 tablespoon Kasuri methi (dried fenugreek leaves)
  • 1.5 teaspoons Salt
  • 2 tablespoons Fresh coriander leaves
  • 200 ml Water

Directions

Step 1

Cut the paneer into 1-inch cubes and set aside.

Step 2

In a pan, boil the tomatoes for 5 minutes, then peel off the skins.

Step 3

Blend the boiled tomatoes along with ginger, garlic, and cashew nuts into a smooth paste.

Step 4

Finely chop the onion.

Step 5

Heat 25 grams of butter in a large pan over medium heat. Add the cumin seeds and sauté for 1 minute until they begin to crackle.

Step 6

Add the chopped onion to the pan and sauté until it turns golden brown.

Step 7

Pour the tomato-cashew paste into the pan. Cook for 10 minutes until the oil begins to separate from the mixture.

Step 8

Add the red chili powder, turmeric powder, and salt to the mixture. Stir and cook for another 2 minutes.

Step 9

Add water and bring the mixture to a gentle simmer. Cook for 5 minutes.

Incorporate the paneer cubes into the sauce, gently stirring to coat them well.

Reduce the heat to low. Stir in the remaining 25 grams of butter, followed by cream and garam masala. Mix gently.

Crush the kasuri methi between your palms and sprinkle it on top of the paneer. Stir again.

Garnish with fresh coriander leaves before serving.
