Ingredients

  • 500 grams Boneless chicken thighs
  • 3 tablespoons Gochugaru (Korean red pepper flakes)
  • 2 tablespoons Gochujang (Korean red pepper paste, sugar-free version)
  • 2 tablespoons Soy sauce
  • 4 units Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 4 tablespoons Water
  • 100 grams Mozzarella cheese, shredded
  • 2 units Green onions, chopped
  • 1 tablespoon Sesame seeds, toasted

Directions

Step 1

Start by preparing the chicken thighs. Trim excess fat and cut into bite-sized pieces.

Step 2

In a mixing bowl, combine gochugaru, gochujang, soy sauce, minced garlic, minced ginger, rice vinegar, sesame oil, and water. Mix well to create a marinade.

Step 3

Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Allow the chicken to marinate for at least 15 minutes. For best results, marinate for an hour in the refrigerator.

Step 4

Preheat a large non-stick skillet over medium-high heat. Add the marinated chicken to the skillet, including all the marinade.

Step 5

Cook the chicken for about 20 minutes, stirring occasionally, until fully cooked and the sauce has thickened slightly. The chicken pieces should be tender and the sauce should cling to them nicely.

Step 6

Lower the heat to medium, and sprinkle the shredded mozzarella cheese evenly over the chicken in the skillet. Cover the skillet with a lid to melt the cheese, about 3-5 minutes.

Step 7

Once the cheese is melted and bubbly, remove the skillet from the heat.

Step 8

Garnish with chopped green onions and toasted sesame seeds before serving.

Step 9

Serve hot, and enjoy your sugar-free Korean Fire Chicken!
