Season the short ribs generously with salt and pepper.
In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until well browned, about 3-4 minutes per side. Remove the ribs and set aside.
In the same pot, add chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
