  • 4 pounds beef short ribs
  • 3 tablespoons olive oil

  • 4 cloves garlic, minced
  • 14 ounces diced tomatoes
  • 2 cups beef broth
  • 1 cup red wine
  • 6 sprigs fresh thyme
  • 2 leaves bay leaves
  • 2 sprigs fresh rosemary
  • 2 tablespoons balsamic vinegar

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Season the beef short ribs generously with salt and black pepper.

In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Remove ribs and set aside.

In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until vegetables are softened.
