Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 2 large Eggs
  • 2 tablespoons Unsalted butter
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 cup Ricotta cheese
  • 0.5 cup Cream cheese
  • 1 teaspoon Lemon zest
  • 2 tablespoons Stevia or erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 1 as needed Cooking spray

Directions

Step 1

In a mixing bowl, combine the flour, milk, eggs, melted butter, salt, and vanilla extract. Whisk the ingredients until you have a smooth and thin batter. Allow the batter to rest for about 10 minutes.

Step 2

While the batter rests, prepare the filling. In a separate bowl, mix the ricotta cheese, cream cheese, lemon zest, stevia or erythritol sweetener, and vanilla extract until well combined. Set aside.

Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of butter.

Pour a small amount of the batter (about 2-3 tablespoons) into the skillet, tilting it in a circular motion to evenly coat the bottom with a thin layer.
