Indulge in the wholesome delight of Sugar-Free Blintzes, a guilt-free twist on the classic crepe dish that’s perfect for breakfast, brunch, or dessert. These thin, delicate crepes are made with a simple batter of all-purpose flour, milk, eggs, and a touch of vanilla, offering a base that’s light yet satisfying. The real star is the creamy, sugar-free filling, crafted with ricotta and cream cheese, infused with zesty lemon and naturally sweetened with stevia or erythritol. Once stuffed and rolled, the blintzes can be lightly browned for added texture and served warm with a dollop of sugar-free yogurt or fresh fruit. With no added sugar and a luscious, tangy filling, this recipe is the perfect blend of comfort and health-conscious indulgence, ideal for anyone cutting back on sugar without compromising on flavor.

In a mixing bowl, combine the flour, milk, eggs, melted butter, salt, and vanilla extract. Whisk the ingredients until you have a smooth and thin batter. Allow the batter to rest for about 10 minutes.
While the batter rests, prepare the filling. In a separate bowl, mix the ricotta cheese, cream cheese, lemon zest, stevia or erythritol sweetener, and vanilla extract until well combined. Set aside.
Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of butter.
Pour a small amount of the batter (about 2-3 tablespoons) into the skillet, tilting it in a circular motion to evenly coat the bottom with a thin layer.
Cook for about 1-2 minutes, or until the edges start to lift and the crepe easily releases from the pan. Flip and cook the other side for an additional 30 seconds. Remove to a plate.
Repeat with the remaining batter, reapplying the cooking spray as needed to prevent sticking.
Place about 2 tablespoons of the filling near the edge of each crepe. Fold the sides in and roll the crepe up to enclose the filling.
Once all the blintzes are filled, you can optionally fry them again in the skillet (seam side down first) with a little butter until heated through and lightly browned, about 1-2 minutes per side.
Serve warm with fresh fruit or a dollop of sugar-free yogurt.
