Ingredients

  • 125 grams unsalted butter
  • 125 grams almond flour
  • 100 grams all-purpose flour
  • 60 grams xylitol or erythritol
  • 5 grams sea salt
  • 5 grams baking powder
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a large bowl, cream the unsalted butter together with the xylitol or erythritol until the mixture is smooth and creamy.

Step 3

Add the egg and vanilla extract to the butter mixture, beating until fully incorporated.

Step 4

In a separate bowl, combine the almond flour, all-purpose flour, sea salt, and baking powder. Stir until evenly combined.

Step 5

Gradually mix the flour mixture into the butter mixture until a smooth dough is formed.

Step 6

Divide the dough into four equal portions and wrap each in plastic wrap. Chill in the refrigerator for about 10 minutes to firm up the dough.

Step 7

Take one portion of the dough out of the refrigerator at a time. Roll it out between two sheets of parchment paper to about a 1/2 cm thickness.

Step 8

Using a round cookie cutter, cut the dough into small circles and place them on the prepared baking trays.

Step 9

Repeat with remaining portions of the dough.

Step 10

Bake in the preheated oven for about 12-15 minutes, or until the galettes are lightly golden brown around the edges.

Step 11

Remove the trays from the oven and let the galettes cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Once cooled, store the galettes in an airtight container for up to a week.
