Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.75 cup Erythritol
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Swerve confectioners sugar substitute
  • 1 tablespoon Gelatin powder
  • 2 tablespoons Cold water
  • 0.33 cup Sugar-free rainbow sprinkles
  • 1 teaspoon Butter extract

Directions

Step 1

In a small bowl, pour 2 tablespoons of cold water and sprinkle the gelatin powder over it to bloom for about 5 minutes.

In a medium saucepan, combine the heavy cream, whole milk, erythritol, and salt. Heat over medium-low heat, stirring occasionally, until the mixture is hot, but not boiling, about 5-7 minutes.

Add the bloomed gelatin to the hot cream mixture and stir until completely dissolved.

Remove the saucepan from heat and stir in the vanilla extract, butter extract, and Swerve confectioners sugar substitute until well combined.
