  • 2 whole Pandan leaves
  • 1 teaspoon Turmeric powder
  • 200 grams Tapioca flour
  • 50 grams All-purpose flour
  • 1 teaspoon Instant yeast
  • 1 teaspoon Salt
  • 5 large Eggs
  • 100 grams Erythritol

Directions

Step 1

In a small saucepan, combine the coconut milk, stevia powder, and pandan leaves. Heat the mixture on low until warm, about 5 minutes. Take care not to boil. Allow it to cool and remove the pandan leaves.

Step 2

Stir in the turmeric powder into the warm coconut milk and set aside.

Step 3

In a mixing bowl, combine tapioca flour, all-purpose flour, and instant yeast. Mix well until evenly distributed.

In a separate mixing bowl, whisk together the eggs, salt, and erythritol until well combined.

Gradually add the cooled coconut milk mixture to the egg mixture, whisking continuously to ensure a smooth batter.
