Ingredients

  • 2 cups All-purpose flour
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Yogurt
  • 2 tablespoons Oil
  • 0.5 cup Warm water
  • 0 Oil for deep frying

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.

Step 2

Add the yogurt and 2 tablespoons of oil to the dry ingredients and mix well.

Step 3

Gradually add warm water to the mixture while kneading to form a smooth and soft dough. The dough should not be sticky. You may not need all the water.

Step 4

Once the dough is ready, cover it with a damp cloth and let it rest for at least 1 hour. This resting period allows the dough to become more pliable.

Step 5

After resting, divide the dough into 10-12 equal portions and shape them into smooth balls.

Step 6

On a lightly floured surface, roll each dough ball into a circle about 6-7 inches in diameter. Ensure the thickness is even.

Step 7

Heat oil in a deep frying pan or wok over medium-high heat. To check if the oil is ready, drop a small piece of dough into it. If it rises to the surface quickly, the oil is hot enough.

Step 8

Carefully slide the rolled bhature into the hot oil. It should puff up immediately. Gently press with a slotted spoon to help it puff evenly.

Step 9

Fry until golden brown on both sides. Ensure you turn the bhature to cook both sides evenly.

Step 10

Remove the bhature with a slotted spoon and drain on paper towels to remove excess oil.

Step 11

Serve the sugar-free bhature hot with chickpea curry or your choice of accompaniment.
