  • 2 cups Vegetable oil
  • 1 medium Potato, thinly sliced
  • 1 small Eggplant, thinly sliced

Directions

Step 1

In a large mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, carom seeds, baking powder, and salt.

Step 2

Add the chopped green chilies and finely chopped onion to the dry ingredients.

Ensure that the batter is thick enough to coat the back of a spoon but not too runny.

In a deep frying pan, heat vegetable oil over medium heat.

Step 7

Once the oil is hot, dip the thinly sliced potatoes and eggplant into the batter, ensuring they are well coated.

Carefully drop the coated slices into the hot oil, frying them in batches to avoid overcrowding.

Step 9

Fry each side for about 2-3 minutes or until they turn golden brown and crisp.

Step 10

Use a slotted spoon to remove the bhajias and drain them on a paper towel-lined plate.

Step 11

Serve hot with chutney or sauce of your choice.
