  • 2 cups Old-fashioned oats
  • 1.5 cups Whole wheat flour
  • 0.75 cups Butter
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 1 cup Dates, pitted
  • 0.5 cup Boiling water
  • 2 cups Mixed berries (fresh or frozen, thawed)
  • 2 tablespoons Chia seeds
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium-sized bowl, combine the oats, flour, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Press two-thirds of the oat mixture evenly into the bottom of the prepared baking dish to form the crust.

In a small bowl, cover the pitted dates with boiling water and let them soak for about 10 minutes to soften.
