Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.
In a medium-sized bowl, combine the oats, flour, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Press two-thirds of the oat mixture evenly into the bottom of the prepared baking dish to form the crust.
In a small bowl, cover the pitted dates with boiling water and let them soak for about 10 minutes to soften.
Blend the softened dates with water in a food processor until smooth to create a date paste.
In a medium pan, combine the mixed berries, chia seeds, lemon juice, and cinnamon over medium heat. Cook until the berries start to break down and the mixture thickens, about 5-7 minutes.
Remove the pan from heat and stir in the date paste for natural sweetness.
Spread the berry mixture evenly over the crust in the baking dish.
Sprinkle the remaining oat mixture over the top of the berry layer, pressing gently.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Cut into 12 squares and serve.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
