Ingredients

  • 200 grams Unsweetened shredded coconut
  • 200 milliliters Coconut milk
  • 60 grams Sugar-free sweetener (such as erythritol or stevia)
  • 50 grams Unsweetened desiccated coconut (for rolling)
  • 15 grams Butter
  • 1 teaspoon Sugar-free vanilla extract
  • 15 pieces Cloves

Directions

Step 1

In a medium-sized saucepan, combine the unsweetened shredded coconut, coconut milk, sugar-free sweetener, and butter.

Step 2

Place the saucepan over medium heat and stir the mixture continuously to prevent sticking or burning.

Step 3

Cook the mixture for about 15-20 minutes until it thickens and starts to release from the bottom of the pan.

Step 4

Once thickened, remove the mixture from the heat and stir in the sugar-free vanilla extract.

Step 5

Let the mixture cool down until it's comfortable to handle, but not completely cold, to make shaping easier.

Step 6

Once cooled, lightly grease your hands with a little butter or coconut oil to prevent sticking, and shape the mixture into small balls, about the size of a walnut.

Step 7

Roll each ball in the desiccated coconut to coat evenly.

Step 8

Insert one clove on top of each coconut ball for a traditional touch, but it's optional.

Step 9

Place the coconut balls in paper mini cups for a festive presentation.

Step 10

Serve immediately or store in an airtight container in the refrigerator for up to 5 days.
