Ingredients

  • 2 medium-sized raw beetroot
  • 200 grams medjool dates
  • 100 grams almond meal
  • 50 grams cocoa powder
  • 60 milliliters coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon sea salt

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a square baking dish (approx. 8x8 inches) with parchment paper.

Step 2

Peel and grate the raw beetroots using a food processor or hand grater. Set aside.

Step 3

Pit the medjool dates and soak them in warm water for about 10 minutes to soften.

Step 4

After soaking, drain the dates and add them to a food processor. Blend until they form a paste.

Step 5

Add the grated beetroot to the food processor along with the almond meal, cocoa powder, coconut oil, vanilla extract, baking powder, and sea salt.

Blend all the ingredients together until the mixture is well combined and forms a thick batter.
