Ingredients

  • 2 medium Raw beetroot
  • 1 cup Chickpea flour
  • 1.5 cups Water
  • 2 tablespoons Olive oil
  • 2 tablespoons Ground flaxseed
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel and grate the beetroot using a fine grater to yield approximately 1 cup of grated beets. Place the grated beetroot in a bowl and set aside.

Step 2

In a large mixing bowl, combine chickpea flour, water, olive oil, ground flaxseed, baking powder, salt, and black pepper. Stir the mixture until smooth and well combined.

Step 3

Add the grated beetroot to the flour mixture and stir until the beets are evenly distributed throughout the batter.

Let the batter rest for about 10 minutes to allow the flaxseed to absorb moisture and thicken the batter slightly.

Preheat a non-stick pan over medium heat. Lightly grease the pan with a little olive oil if necessary.
