Ingredients

  • 250 grams dried white beans
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic cloves, minced
  • 400 grams canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 leaf bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 700 milliliters water
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the dried white beans thoroughly under cold water and place them in a large bowl. Cover them with plenty of water and let them soak for at least 8 hours or overnight.

Drain and rinse the soaked beans. Set them aside.

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
