Ingredients

  • 250 grams All-purpose flour
  • 7 grams Instant yeast
  • 1 teaspoon Salt
  • 60 grams Stevia (granulated or powdered equivalent to sugar)
  • 120 milliliters Whole milk
  • 60 grams Unsalted butter (melted)
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 500 milliliters Vegetable oil (for frying)
  • 240 milliliters Heavy cream
  • 50 grams Sugar-free vanilla pudding mix
  • 5 grams Gelatin powder
  • 60 milliliters Cold water

Directions

Step 1

In a large bowl, mix together the flour, instant yeast, salt, and Stevia.

Step 2

In a saucepan, gently warm the milk (do not boil) and then add the melted butter, egg, and vanilla extract. Stir to combine.

Step 3

Pour the milk mixture into the flour mixture and knead until a smooth dough forms. If the dough is sticky, add a bit more flour.

Step 4

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it has doubled in size.

Step 5

While the dough rises, prepare the Bavarian cream filling. Sprinkle gelatin over cold water in a small bowl and let it bloom for about 5 minutes.

Step 6

In a medium saucepan, heat the heavy cream over medium heat until it is hot but not boiling. Remove from the heat and stir in the sugar-free vanilla pudding mix until smooth.

Step 7

Add the bloomed gelatin to the cream mixture and stir until well combined. Let it cool to room temperature.

Step 8

Once the mixture is cool, whip it until it becomes a thick cream, then refrigerate until the donuts are ready to fill.

Step 9

After the dough has risen, roll it out on a floured surface to about 1/2 inch thickness. Use a donut cutter to cut out rounds.

Step 10

Heat the vegetable oil in a deep fryer or large heavy pot to 180°C (355°F). Carefully fry the donuts in batches until golden brown, about 1-2 minutes on each side.

Step 11

Drain the donuts on a paper towel-lined plate to remove excess oil.

Step 12

Fill a piping bag with the Bavarian cream. Using the tip of the piping bag, poke a hole into the side of each donut and fill with cream until plump.

Step 13

Optionally, dust the donuts with powdered Stevia for an extra touch of sweetness before serving.
