In a large bowl, mix together the flour, instant yeast, salt, and Stevia.
In a saucepan, gently warm the milk (do not boil) and then add the melted butter, egg, and vanilla extract. Stir to combine.
Pour the milk mixture into the flour mixture and knead until a smooth dough forms. If the dough is sticky, add a bit more flour.
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it has doubled in size.
While the dough rises, prepare the Bavarian cream filling. Sprinkle gelatin over cold water in a small bowl and let it bloom for about 5 minutes.
In a medium saucepan, heat the heavy cream over medium heat until it is hot but not boiling. Remove from the heat and stir in the sugar-free vanilla pudding mix until smooth.
Add the bloomed gelatin to the cream mixture and stir until well combined. Let it cool to room temperature.
Once the mixture is cool, whip it until it becomes a thick cream, then refrigerate until the donuts are ready to fill.

Drain the donuts on a paper towel-lined plate to remove excess oil.
