Ingredients

  • 4 pounds beef back ribs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup apple cider vinegar
  • 1 cup tomato paste
  • 1 teaspoon liquid smoke
  • 2 tablespoons dijon mustard
  • 2 tablespoons stevia
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the beef ribs dry with paper towels and place them on a rimmed baking sheet.

Step 3

In a small bowl, mix together the garlic powder, onion powder, paprika, smoked paprika, ground cumin, chili powder, salt, and black pepper.

Step 4

Drizzle the olive oil over the ribs and rub to coat evenly.

Step 5

Sprinkle the spice mix over the ribs and rub it in thoroughly on all sides.

Step 6

Cover the baking sheet with aluminum foil and place it in the preheated oven.

Step 7

Allow the ribs to bake for 2.5 hours, or until they are tender.

Step 8

Meanwhile, prepare the sugar-free barbecue sauce: In a medium saucepan, combine apple cider vinegar, tomato paste, liquid smoke, dijon mustard, stevia, and water.

Step 9

Bring the sauce mixture to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the sauce thickens slightly.

Step 10

Remove the ribs from the oven and discard the foil.

Step 11

Increase the oven temperature to 375°F (190°C).

Step 12

Brush a generous amount of the prepared barbecue sauce over the ribs.

Step 13

Return the ribs to the oven, uncovered, for an additional 20-30 minutes, glazing them once more halfway through. The sauce should caramelize nicely on the ribs.

Step 14

Remove from the oven and let the ribs rest for a few minutes before slicing.

Step 15

Serve the ribs warm with extra barbecue sauce on the side if desired.
