Ingredients

  • 3 large Ripe bananas
  • 2 cups Unsweetened almond milk
  • 3 tablespoons Cornstarch
  • 2 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Stevia or any sugar substitute
  • 0.25 teaspoon Salt
  • 1 cup Sugar-free whipped topping
  • 12 pieces Vanilla wafer cookies, sugar-free

Directions

Step 1

Peel and slice bananas, setting aside three slices for garnishing each shooter.

Step 2

In a medium saucepan, combine the cornstarch, stevia, and salt. Slowly whisk in the almond milk to make sure there are no lumps.

Step 3

Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5-7 minutes.

Step 4

In a small bowl, beat the egg yolks. Gradually temper the egg yolks by adding a small amount of the hot almond milk mixture while constantly whisking to prevent curdling.
