Ingredients

  • 1 piece whole snapper, cleaned and gutted
  • 1 large lemon
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 clove garlic clove, minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, sliced

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Rinse the snapper inside and out under cold water, then pat it dry with paper towels.

Step 3

Make three diagonal slashes on each side of the snapper to help it cook evenly.

Step 4

Slice the lemon into thin rounds and set aside.

Step 5

In a small bowl, mix the olive oil, chopped parsley, thyme leaves, minced garlic, sea salt, and black pepper.

Step 6

Rub half of the olive oil and herb mixture over the outside of the snapper, making sure to get a little into the slashes.

Step 7

Stuff the cavity of the snapper with some of the lemon slices and a few onion slices.

Step 8

Layer the remaining onion slices on the bottom of a baking dish to create a bed for the snapper.

Step 9

Place the snapper on top of the onions, and arrange the remaining lemon slices over the top and inside the slashes of the fish.

Step 10

Drizzle the rest of the olive oil and herb mixture over the snapper.

Step 11

Cover the baking dish with aluminum foil and bake for 20 minutes.

Step 12

Remove the foil and bake for an additional 5 minutes or until the fish flakes easily with a fork.

Step 13

Transfer the snapper to a serving platter and garnish with additional fresh herbs if desired.

Step 14

Serve immediately and enjoy!
