Ingredients

  • 500 ml Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 4 large Eggs
  • 40 grams Cornflour
  • 100 grams Erythritol
  • 0.5 teaspoon Ground cinnamon
  • 2 sheets Low carb puff pastry sheets

Directions

Step 1

Preheat the oven to 180°C (356°F). Line a 9x13 inch baking dish with baking paper.

Step 2

Roll out the low carb puff pastry sheets and cut them to fit the base of the baking dish. Place one sheet in the bottom of the dish.

Step 3

In a medium saucepan, combine the unsweetened almond milk and vanilla extract. Heat over medium heat until it starts to simmer, then remove from heat.

In a mixing bowl, whisk together the eggs, cornflour, and erythritol until well combined and smooth.

Gradually add the hot almond milk mixture into the egg mixture, whisking continuously to prevent curdling.
